A simple and easy recipe which is healthy and at the same time doesn't compromise on the taste. Most of the time, if you say that a dish is healthy, you would surely have to compromise on taste. But, this is different. You have taste and you can take care of your health.

Here comes the recipe for Baked Vazhaipoo Vadai (Banana Blossom), a healthy twist on the traditional deep fried version.

Ingredients:

Vazhaipoo / Banana blossom - 1 - Cleaned
Chana dhal - 1 small cup - Soaked for 2 hrs
Onion - finely chopped - 1 cup
Ginger Garlic paste - 1 tsp
Cilantro/Coriander leaves - a handful
Fennel seeds - 1/2 tsp
Cumin powder- 1 tsp
Coriander Powder - 2 tsp
Green chilies- 1 finely chopped
Red chilies - 3
Turmeric powder - a pinch
Salt - to taste
Oil - 1-1/2 tbsp

Method:

Preheat the oven to 400 F/200 C.

Line a baking sheet with aluminium foil and spray with oil.

Either steam the cleaned banana blossom until soft or you can cook them in  boiling water for 2 to 3 min.

Grind the soaked channa dhal in a blender with red chilies,  fennel seeds, cumin and coriander powder, turmeric powder and salt.

Do not add water and grind it to a coarse mixture.

Add the cooled banana blossom to the  blender and pulse until everything is combined.

Transfer the mixture to a big mixing bowl and add the onion, green chilli, garlic, chopped cilantro and oil. Mix well.

Take a tablespoon or two size mixture and make balls.

Place over the foil and flatten it.

Place all the balls with 1 inch gap between them.

Bake in oven for 30 to 40 mins, flipping once in between.

Eat Healthy - During Pregnancy

With the great success of Eat Healthy- Fight Diabetes Event, (Don't forget to check out the Part 1 and Part 2 of the round up) I am so happy to announce this month's topic. It is eating healthy during pregnancy. It is important to eat healthy. But it is even more important to eat healthy when you are eating for two. Pregnancy is an experience. Most of us get lost in the excitement and eat a lot, which is more junk than healthy and gain weight!

Gaining weight is important during pregnancy. But, when beyond the limit, invites complications. Eating right is what we are talking about. We require few vitamins more than the others. Like more of calcium and less of carbohydrates. More proteins and fiber. More of Iron. Eating what we need is what we are looking at. I don't want to bore you with facts. You know what I am talking about and I am waiting to see the healthy recipes.

Here is a video that I found which talks about what and what not to eat during pregnancy.

There are numerous to-be moms and people who are trying to conceive who has less knowledge in this topic. Here is a way to help them out.

Eat Healthy - Fight Dibetes Round up (part 1)

Diabetes - A threat to all human beings. But, it can be easily fought,if you have the right spirit and proper guidance. For a Diabetic, there are three important things.

1. Exercise
2. Medication
3. Proper Diet

Yes! Diet plays a very important role in fighting diabetes. Through this event, I was able to learn a lot from our fellow participants. I take this opportunity to thank them from bottom of my heart for sharing such useful tips. I am very sure that it will be helpful to a lot of people. From my part I wanted to share few facts,

Patients with Type 1 diabetes should have a diet that has approximately 35 calories per kg of body weight per day (or 16 calories per pound of body weight per day). Patients with Type 2 diabetes generally are put on a 1500-1800 calorie diet per day to promote weight loss and then the maintenance of ideal body weight. However, this may vary depending on the person's age, sex, activity level, current weight and body style. More obese individuals may need more calories initially until their weight is less. This is because it takes more calories to maintain a larger body and a 1600 calorie diet for them may promote weight loss that is too fast to be healthy. Read more here.

Also did you know that too much Vitamin c is not good for diabetic hearts? I read this article and was real shocked!

I also came across a good diabetic diet e-book. You can read it here.

You can also get some Diabetes related books and kits from here.

I do not want to overwhelm you with information as we have our participants sharing a lot of information with us. I have divided this roundup into two parts. My second roundup will consists of entries from 4 great friends and supporters of this event. I did this mainly to say my special thanks to Priya, EC, Yasmeen and Srilekha for showing their support and encouragement by sending in 20 or more entries each. Thanks girls!

I have sent the details to Aruna for selecting the 10 recipes which will be up for voting. It might take a couple of days as Aruna has to come up with her choice. I will update you on the same. Thanks for understanding and your support! With no further delay, let me start my Round up - Part 1

Most diabetics are actually encouraged to eat more complex carbohydrates vegetables are an ideal source of these. The ingredients of this soup are rich in fibre which helps in reduction of cholesterol which is somewhere related to diabetes.Besides fibre they are rich in various nutrients.

The positive metabolic effects of the fibre rich diet are many: reduced after-mealtime hyperglycaemia and delayed hypoglycaemia; increased tissue sensitivity to insulin; reduced cholesterol and triglyceride levels with increased HDL-cholesterol levels; and progressive weight reduction which is very good for the diabetics."

Pureed White beans "Legumes are always a healthy option for diabetics. Beans contain amylase inhibitors which help to slow the absorption of other starches consumed during the same meal. Meet our EH- Fight Diabetes Sponsor!

I have been looking out for sponsors for the EH event for long time now. When I posted this Diabetic friendly recipe contest, one of my childhood friend, who is a regular reader of this blog, contacted me and was willing to sponsor this event. I am very thankful to her. When I asked why this event? She said that she was a victim herself to gestational diabetes and wanted to support each and every mom who is suffering from gestational diabetes through this event.

Let me introduce you all to my dear friend Aruna, from Minneapolis. She is an IT consultant and a loving proud MOM! When she volunteered to sponsor, she was very particular in dedicating it to her lovely daughter Sandhya. So it is cute Sandhya who is the sponsor here! My best wishes to her.

So friends, meet our lovely sponsor...SANDHYA!

Ofcourse Aruna will be judging on behalf of our little sandhya!

Every mom will have the fear of getting gestational diabetes during pregnancy and hence I asked Aruna on behalf of all the 'to be moms' these following questions.

How did you feel when you were told that you had gestational diabetes?

My pregnancy was progressing normally till the 24th week. I was just another pregnant woman experiencing all the happiness she can get until I got the call from my Ob/Gyn’s office that day. My nurse called me to let me know that my test results for gestational diabetes turned out to be positive. She also let me know that mine was an extreme case and I need not take the second screening because the first screening was so high that my diabetic condition is confirmed. I was shocked but I started to think ahead and asked her what needed to be done next. The rest that happened all changed me into a totally new person: they made me more brave, face lots of challenges and helped me control my mind from extreme sugar cravings.

What are the precautions you would suggest?

Even if you are pregnant, don’t indulge yourself too much by eating lots of sweets, ice cream and other tempting stuff. Stick to a very very healthy diet. It is very important not only for you but also for your baby. Don’t stop exercising but keep it light. I would say, keep walking all throughout your pregnancy. Relax and take rest. Don’t over stress yourself.

How did you take care of yourself during pregnancy with gestational diabetes?

Just make sure that you eat fresh green vegetables. Measure your portions when you eat. Don’t over eat or over indulge in anything. Try to reduce your stress and relax by taking a nice long walk. Lastly, be truly happy from inside – you are not sacrificing anything. You are just doing this for yourself and for the little one.

Is it dangerous to have gestational diabetes?

Not at all. It is just a condition that will go away the same day you deliver your baby. I won’t ask you to stay away from sugars all together. Just try to limit your cravings. After all, it is all for your good.

What will you say to a pregnant lady with gestational diabetes?

I just have only one thing to say: Think about the bundle of joy that you will have in your hands after everything is over. Maybe all the sufferings you endured have given you this priceless treasure in your hands. And you will hear a soft whisper in your ears…”YOU DESERVED IT MOM!”

And the main thing is consult you doctor!

Thanks Aruna and Sandhya for Supporting this event. It means a lot. Hope to see you during the round up!

Below is an article which I wrote after researching about diabetes. Hope it is helpful.

Any medical student or a person who is educated in the medical field will correctly point out the three types of diabetes.

- Type 1 Diabetes
- Type 2 Diabetes
- Gestational

However, when you question a lay man on diabetes, his answers most of the time, will be related to Type 2 diabetes. Mainly because, this the most common type of diabetes and other reason could be that he is suffering from it already.

Type 2 diabetes or Diabetes mellitus type 2 is due to our body not secreting enough insulin or due to our cells rejecting the secreted insulin. The definition of Insulin in any dictionary will be given as ‘Hormone secreted by the isles of Langerhans in the pancreas; regulates storage of glycogen in the liver and accelerates oxidation of sugar in cells’. Simply put, Insulin is necessary for our body to utilize Glucose for producing the required energy.

It is true that Type 2 diabetes affects a certain group of people. This doesn’t mean that others can party. Even a 3 year old has a threat of getting this evil disease. Mostly, this disease is fond of people who are obese or overweight, people with a family history of this diabetes, women who have had gestational diabetes and people with hormonal imbalance.

The common symptoms of this disease are fatigue, increased hunger or thirst, frequent urination, numbness. Prevailing in more than half of the current population, it can not only affect the glucose and energy level in our body, but also, can lead to dehydration, heart attack, blindness, kidney problems. We sure are dealing with a major criminal here.

It is more important to prevent a disease than thinking of the ways to cure it. Though we have medicines to keep diabetes in control, we are sure that it is a lifelong treatment that we need to undergo to save our life. To prevent this, the simple way is to exercise regularly and maintain proper diet. A healthy intake, by reducing the sugar and fat content, can help us succeed in our goal. If you feel you might be at stake, do not hesitate to consult your doctor immediately.

A diabetic diet, Diabetic cooking or Diabetic recipes - You can call it however you want. But the main motto behind this event is to provide a healthy diet/recipes for people who are suffering from Diabetes and for pregnant women who get gestational diabetes during pregnancy.
